How to Use Sprouted Onions

Sprouting OnionsEven if you properly stored your onions, you may find that some may still end up sprouting over the winter. Rather than toss the sprouting onions on the compost pile, you can breath new life into them by planting and harvesting the fresh top growth during the winter.

Garden pot method: Take a 4 inch or 5 inch pot with drainage and plant your sprouting onion in it leaving the top 2/3 exposed and above the soil line. Water and place on a sunny window sill; use the green tops that emerge as you would green onions for salads, stir-fry or in soups.

Glass jar method: Use a glass jar that is smaller in diameter than the base on the onion. Fill with water and place the onion on top of jar so that the roots are in the water. Place on a sunny window sill and harvest the fresh, green tops. Change the water several times a week to prevent algae build-up.
