Quick n' Easy Cornbread Recipe

Easy Cornbread RecipeOur quick and easy cornbread recipe is perfect to make anytime of the year, but especially now when the snow has already started to fall in the mountains surrounding our peaceful farm. I whipped up an extra large batch of this delicious cornbread yesterday and paired it with a bowl of homemade spicy chili, ideal for dinner as the temperatures start to drop outside.

1 1/2 cup yellow or white cornmeal
1/2 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
2 eggs
1 cup low-fat milk
3 tablespoons organic olive oil or organic sweet butter


Preheat oven to 400 degrees. Grease and flour an 8 inch backing pan or single layer cake pan and place in oven to heat while mixing batter.

Sift together cornmeal, all-purpose flour, baking powder, sugar and salt in a medium glass bowl. Combine eggs and oil mixing with a whisk. Add in milk and stir. Pour wet ingredients into dry ingredients mixing until just combined. Do not over mix, batter should be thick and slightly lumpy. Pour batter into hot pan. Bake 20 - 30 minutes - clean toothpick test. Cool 5 minutes before serving.
